WSQ Level 3 Diet and Nutrition in Food Catering

It is frequently hard to decide between Taste and Nutrition when it comes to our favourite dish. As we become increasingly aware of the links between what we eat and our health, caterers are in a good position than ever to make the best of a growing customer demand for food prepared in a healthier way. The WSQ Level 3 Diet and Nutrition in Food Catering course is aimed at F&B personnel such as pastry cook, baker, food technologists, assistant head chef and station chef because of their direct participation from the choice of food ingredients, food processing from washing to trimming to cooking and food handling. Their work environment will either be at central kitchen or food outlets. The course is also recommended for those who aspire to start one or even as a consumer longing for healthier choice.

What will I learn?

  • Healthy Diet Pyramid (my Healthy Plate) and guidelines at the workplace according to standard operating procedures meeting food safety and health requirements
  • Applying strategies for healthy choices in the workplace according to standard operating procedures meeting food safety and health requirements. You will investigate the measures that you can take in the kitchen to ensure that the food you produce is of a healthy standard.
  • Apply strategies for special dietary situation in the workplace according to standard operating procedures meeting food safety and health requirements. In meeting the needs of customers who have special diets, such strategies, if applied correctly will satisfy customers, increase business and brand value.
